Celeste's Grilled Swordfish

4 fillets of swordfish cut to about an 1/8 of an inch think
5 cloves of chopped garlic
1/3 cup chopped Italian parsley
1/3 cup parmesan cheese
15 picholine or Languedoc olives, chopped (may have to chop around pit)
Salt and Pepper
Panko breadcrumbs
Olive oil

Mix together garlic, parsley, cheese and olives to form a paste
Spread on one side of the swordfish
Sprinkle with salt and pepper
Roll the swordfish around the mixture and coat outside of fish with olive oil
Coat with panko breadcrumbs and secure with bamboo sticks or metal skewers
Grill the fish until done, about 7 minutes per side
