Tomato Salad
This recipe comes from my sister in law, Lindsay. It combines crunchy green beans, sweet tomatoes and hot goat cheese. It is a great appetizer salad. The fried goat cheese is also very impressive if you happen to have friends over for dinner.
Caesar Salad
This is a classic caesar right down to the raw egg yolk...no worries, using a pasteurized egg is the secret. The dressing can be made ahead of time in a food processor and is worth doing it yourself. I have also included directions on how to make hot, crispy and fresh sourdough croutons. This salad is one of my favorites and is a dinner in itself or topped with some grilled chicken or shrimp.
Creamy Spinach Salad
I first tasted this salad when I was in college at my half sisters house in New York. It uses simple ingredients, assembles in no time and is one of the best salads I have ever tasted. It is just a fabulous combinations of flavors. I usually make this salad as an accompaniment to my fruit roasted pork loin.
Hot Spinach Salad
My Dad has perfected this salad and when he comes in town to cook for me it is my first request. This salad uses 3 main ingredients and is phenomenal to say the least. It is the perfect blend of tart, and salty with some healthy mushrooms and spinach to balance out the most important part, bacon.
Flank Steak Salad
I love Flank Steak and since it is usually served slice thin it makes a perfect salad topping. This salad is great to make for a lunch with the girls or a dinner for two. It is something you would find on a restaurant menu...in fact, that is where my inspiration came from.
