1 pork loin
1 can sliced pears in heavy syrup
1 can apricots in heavy syrup
1 can peaches in heavy syrup
Duck sauce or apricot preserves
Fresh grated ginger
Grease a big roasting pan with cooking spray
Place pork loin in pan and cover with duck sauce or preserves
Top with brown sugar
Place all 3 cans of fruit and juice in pan
Dust pork and fruit with cinnamon and grated ginger
Bake in oven at 350 degrees until pork is done, baste occasionally.
Serve over mashed potatoes.
