Celeste's Molten Cakes

Yields 4 servings

1 stick butter
1/2 of a 12 oz bag + 2 tablespoons of semi sweet chocolate chips
2 tablespoons heavy cream
2 tablespoons powdered sugar
2 eggs
2 egg yolks
1/4 cup sugar
1 teaspoon vanilla extract
Pinch salt
2 tablespoons sifted flour....plus some for flouring ramekins

Preheat the oven to 450 degrees

Grease (with stick of butter) and flour 4 ramekins (can also use sugar), set on a baking sheet

In a double boiler, or a metal bowl set over a pan of simmering water,
melt the butter, chocolate chips, heavy cream and powdered sugar
Stir until smooth and remove from heat

In a bowl, whisk together the eggs, egg yolks, sugar, vanilla and salt

Sift 2 tablespoons flour into the egg mixture and fold together

Fold the chocolate into the egg mixture

Pour into the ramekins and bake for about 12 minutes
Let cool for 2 minutes and flip onto plate, serve with vanilla or coffee ice cream
