Fruit Roasted Pork Loin
My Dad made this for my family one holiday and it has been a staple in our house ever since. It is so easy to make yet so delicious it is hard to believe it takes only a few minutes to prepare. I usually serve this with mashed potatoes and a white wine.....simple, yet spectacular!
Chicken Enchiladas
This recipe was sent in to Gridiron Gourmet from Stephanie Blank. She sent me all the ingredients however no directions, the crew and I made up a recipe and we all fell in love with this dish. It is healthy and can be made a day ahead if you want. When a friend has a baby and needs a dinner, this is my go to dish!
Steak au Poivre
This is my favorite way to eat steak. Au Poivre just means "with peppercorns" and it is the key to this dish. Use a good piece of filet for this one and go ahead and purchase a dry red wine as well. I serve this over sauted spinach and finish with my molten cake for dessert. This dish is sure to impress your guests!
This dish is perfect for summer grilling. It combines olives and other Italian flavors perfectly complementing the mild fish. This is a light dish and needs nothing more than a side of brushetta and a glass of white wine.
Sesame Tuna and Peanut Noodles
I created this dish for my husband, he could eat this for lunch and dinner each day for a week. It is a great Friday night meal. The tuna is simple to make and you can serve it rare to medium well. The noodles are great served warm or cold and are a big hit with our daughters too!
