Celeste's Chicken Enchiladas

3-4 Chicken breasts sliced in strips
2 big onions, sliced
8 oz low fat cream cheese
1-2 cups shredded Mexican cheese blend
1 large jar of red salsa
1 large jar of green salsa
Whole wheat tortillas
Olive Oil
Salt and Pepper
Cooking spray

Saute onions in a little olive oil under tender (about 15 minutes)

Move onions to the side of pan and saute chicken until done
(season both sides with salt and pepper while cooking)

At the same time melt cream cheese and both jars of salsa in a pan over med heat

Spray a casserole dish with cooking spray and spoon some of the
salsa mixture into the bottom of dish so enchiladas don't stick

Begin to make enchiladas;to tortilla add onions, chicken, cheese and
top with salsa mixture, roll up and place in casserole dish

Once in the casserole dish, top enchiladas with remaining salsa and more cheese

Bake in 350 degree oven for 10-15 minutes or until cheese is melted
